  • 1–2 tbsp gingerbread syrup (or sugar-free) OR 1/2–3/4 tsp gingerbread spice blend

Instructions

    1) Cook the pearls
    Cook quick-cook tapioca pearls according to the package. Drain. Keep warm.

    2) Brew the tea
    Steep Assam/Ceylon in 8 oz just-boiled water for 3–4 minutes. Strain/remove bags.

    HOT VERSION3) Sweeten + spice
    Stir brown sugar syrup and gingerbread syrup (or spice) into the hot tea.

    4) Add milk
    Warm the milk (do not boil). Stir into the tea.

    5) Assemble
    Add warm pearls to a heat-safe mug, then pour the milk tea over the top. Serve immediately.

    ICED VERSION3) Sweeten while hot
    Stir brown sugar syrup + gingerbread syrup (or spice) into the hot tea first.

    4) Shake
    In a jar: add sweetened tea + ice + milk. Shake 10–15 seconds.

    5) Assemble
    Add pearls to a cup. Optional: stripe the cup with brown sugar syrup for a “tiger” look. Pour in the iced milk tea.
