A Starbucks-inspired winter bubble tea with chewy boba, creamy matcha, chocolate drizzle, and a pistachio–tahini sauce. Hot or iced.
Ingredients
For the boba
- 1/4 cup dry quick-cook tapioca pearls (or 1 serving)
- 2 teaspoons brown sugar or honey
New For the matcha latte
- 2 teaspoons matcha powder
- 60 ml hot water (not boiling)
- 250 ml milk (dairy or oat)
New Pistachio chocolate sauce
- 2 tablespoons pistachio butter or pistachio cream
- 1 tablespoon tahini
- 1 to 2 tablespoons honey or maple syrup
- Pinch of salt
- 1 to 3 tablespoons milk, to thin
Chocolate layer Group
- 1 to 2 tablespoons chocolate sauce or melted dark chocolate
Optional crunchy topping Group
- 1/4 cup crushed cornflakes or shredded phyllo
- 1 teaspoon butter
- Pinch of salt
Instructions
- Cook the boba.
Cook tapioca pearls according to the packet. Rinse briefly. Soak in brown sugar or honey for 5 minutes. - Make the pistachio sauce.
Mix pistachio butter, tahini, honey or maple syrup, and salt. Add milk slowly until it turns into a thick drizzle. - Whisk the matcha.
Whisk matcha with hot water until smooth and foamy. - Optional crunch.
Toast cornflakes or shredded phyllo in butter on low heat until golden. Add a pinch of salt. - Assemble (iced).
Drizzle chocolate inside the cup. Add boba. Add ice. Pour in milk, then matcha. Finish with pistachio sauce and crunch. - Assemble (hot).
Skip ice. Warm the milk first, then add matcha. Drizzle chocolate in the mug, add boba, pour in the latte, and finish with pistachio sauce.
